Ingredients

  • For Chicken Balls:
  • Chicken breast ½ kg
  • Egg 1
  • Garlic paste 1 tsp
  • White pepper powder 1 tbsp
  • Black pepper powder ½ tsp
  • Chinese salt ½ tsp
  • Baking powder ½ tsp
  • Oil for frying
  • Salt to taste
  • coal 1 piece
  • For topping:
  • Capsicums 2 (cubes)
  • Tomatoes 2 (cubes)
  • Cornflour 1 cup
  • Egg yolks 2-3
  • For sauce:
  • Chili garlic sauce 1 cup
  • Chicken stock ½ cup
  • Onion 1
  • Garlic 2-3 cloves
  • Black pepper 1 tsp crushed
  • Red chili ½ tsp crushed
  • Spring onion 3-4
  • Oil 2 tbsp
  • Salt to taste

Cooking Directions

  1. For chicken balls:
  2. Chop chicken breast, white pepper, black pepper, Chinese salt, baking powder, egg and salt to taste in chopper.
  3. Now make small balls of mixture.
  4. Boil these balls in water for 5 minutes and take out.
  5. Chicken balls are ready..
  6. For sauce:
  7. In a pan put oil and sauté 2-3 garlic cloves and onion for 2 to 3 minutes and add chicken stock.
  8. Then add chili garlic sauce, crushed black pepper, crushed red chili and salt to taste and mix it.
  9. When the mixture get thick then add 3-4 spring onion, mix it.
  10. Sauce is ready.
  11. For topping:
  12. Put tomatoes, capsicums and chicken balls on bbq stick.
  13. Now coat the prepared sticks with egg yolks and 1 cup corn flour.
  14. Then put the sticks in a skillet to fry till golden then place it on tray.
  15. Fry all sticks and give coal smoke.
  16. Pour the sauce and serve it.

Cooking Directions

  1. Wash chicken, apply vinegar and pinch of food color on chicken.
  2. In a bowl add yogurt, crushed red chili, crushed black pepper, ginger garlic paste, tandoori chicken masala and salt to mix and marinate chicken in it.
  3. Now pour lemons juice on chicken and give steam and cover the lid.
  4. When chicken water dries, deep fry it on low flame.
  5. When it turns golden brown, put it in oven and bake it for 10 minutes.

  • Chili powder 1 tsp heaped
  • Nutmeg ¼ tsp (grinded)
  • Mace ¼ tsp (grinded)
  • Poppy seeds ¼ tsp (grinded)
  • Desiccated coconut 1 tbsp (grinded)
  • Almond 6 (grinded)
  • Kewra water 1 tsp
  • Coriander leaves 1 tbsp
  • Mint leaves 1 tbsp
  • Green chilies 4 (chopped)

Cooking Directions

  1. Heat oil in a pan add onion fry till light golden.
  2. Add ginger garlic paste with mince, salt, all spice, chili powder, nutmeg, mace and green cardamom and fry well.
  3. Also add in the paste of poppy seeds, coconut and almond and ½ cup water, cover and cook till done and oil comes on top.
  4. Give smoke of coal, stir in kewra water.
  5. Lastly add coriander leaves, mint leaves and green chilies and serve.

  • Coriander powder ½ tsp (heaped)

  1. Grind together chickpeas, coconut, piper cubeba and black cumin seeds in chopper.
  2. Add mince with brown onion, raw onion, salt, chili powder, ginger garlic paste, all spice, raw papaya, coriander powder and cumin chopperized well till smooth.

  2. Then deep fry for 10 minutes and remove.
  3. Heat ¼ cup oil in a wok, add garlic and slightly brown.
  4. Add in your fried beef with stock, ½ tsp salt and ½ tsp white pepper, 1 tsp sugar, BBQ sauce and ketchup.
  5. When mixture boiling, thicken gravy with corn flour paste.

Chili garlic sauce   2 tbsp
Worcestershire sauce 1 tbsp
Boiled vegetables   1 cup
Baby potatoes   10 to 12 peeled and deep fried

Recipe Method

Prick  the chicken well  and marinate with Ginger garlic paste 1 tbsp, Salt 1 1/2 tsp, Crushed black pepper 1 tsp heaped, Mustard powder 1 tsp, Lemon juice 2 tbsp, Ketchup 4 tbsp, Chili garlic sauce 2 tbsp, Worcestershire  sauce 1 tbsp
Tie the  legs of  the chicken with a rubber band, heat ¼ cup oil in a pan add the marinated chicken fry well on both sides when light golden add in the left over marinade with half cup water, cover and cook on low flame till  the chicken is  tender.
Serve chicken roast with fried baby potatoes, boiled seasonal vegetables.

Marinate 1/2kg chicken strips with salt and white pepper 1/2 tsp each. Heat 1/4 cup oil and fry  1 tsp crushed garlic for 1 min. Add marinated chicken and fry  for 5 minutes then add 8 sliced mushrooms, 1 sliced carrot, 1 spring onion and 6 baby corns with 1 tbsp Wooster sauce, 2 tbsp chili sauce, 1 tbsp oyster sauce, 1tsp hp sauce, 5 tbsp ketchup,  1 tsp salt and 1 1/2 tsp pepper, add 1 cup water and cook till the mixture boils.Lastly thicken the gravy with 1 tbsp corn flour paste. Serve with garlic rice

  • Clarified butter 2 tbsp
Recipe Method
  1. Take yogurt, papaya paste, garlic paste, ginger paste, lemon juice, all spice, green chili paste, red chili powder and salt mix them.

  3. Take your skewers and thread on the strips of meat, just like you’re stitching.
  4. In order for them to cook evenly, stretch the meat out a bit.
  5. Place them on the grill.
  6. They should only take about 8-10 minutes on each side.
  7. Apply clarified butter with the pastry brush while grilling, if you are not using meat with fats.
  8. Serve immediately, with lemon and onion rings.

  1. Grind the ginger, garlic, cumin seed, chilies and coriander to a fine paste.
  2. Add the salt to taste.
  3. Cut meat into desired cubes and rub this paste over it.
  4. Marinate for 2 1/2 hours.
  5. Fix the meat cubes on skewers, placing an onion between each cube of meat.
  6. Grill on a low fire till tender and browned.
  7. In a saucepan heat the ghee, add milk, cream, finely grated almonds and pistachios.
  8. Mix well and cook till slightly thickened.
